I had an outlet attached to a light switch put in above the upper cabinets and out of view. Then, I added rope lighting. It is a great way to change the ambiance. I prefer it more than the LED under cabinet lights. Also, I changed around my layout a bit. My side/side refrigerator was hitting the wall and I had a lot of unusable space in my pantry closet. Therefore, I opened up the closet, put my fridge there and then put in a cabinet pantry with much more usable space.

An inexpensive alternative to a laminate countertop is a natural soapstone countertop. Because of the nature of the stone home owners can fabricate the countertop themselves. Check out http://www.soapstones.com/diy_soapstone.html and you can get more info. They also sell a DIY kit with everything you need to cut your own countertop. Labor is a big component of the cost of a natural stone coutertop. But because you can fabricate the soapstone yourself, homeowners can save 50% or more on a natural stone countertop.
